Hi Tracy,
Here is how I approach a build.
I take the FC out of the box, plug it into my computer, open Betaflight companion,
check the ports, check out how it is configured, and back it up
before I start tinkering, then make a few very basic changes:
1) Level the FC and Calibrate the Accelerometer
2) I make sure that my basic modes and switches are set: 1. Arm and 2. Fly Modes and 3. Buzzer (sometimes)
3) Change the Craft Name
4) Make a few changes to the OSD screen (optional)
I unplug the FC and start my build.
When the motors are connected, I will use Betaflight configurator to check the direction of each motor;
and adjust as necessary either by swapping wires or with BLHeli.
I finish the quad, perform a test hover just to be sure it gets off the ground, flies, and I have some measure of control.
Without making any further changes to Betaflight, I go fly the quad. I want to see how it flies and handles with the factory default tune that is on the FC. In my opinion, making any changes before you fly it is just crazy since you wouldn't know what to change unless you actually have flown the thing. Now, if it flies ok, I leave it alone. I would only change a tune to correct some issue...or...improve some characteristic that I have noticed and don't like.
But, that is just me...

Yesterday, I opened the box on a brand new
Flywoo GOKU F4 35A STACK that I am going to install in one of my quads.
This stack is pretty much already set up in Betaflight including, but not limited to, the following:
1) The ports are all set up including one for the GPS
2) The Rescue mode is set up
3) The VTX table is configured
4) The OSD is setup with just about everything and assumes that it will have a GPS unit
It looks like this thing is ready to go. In fact, I am presuming that the tune is for the Flywoo Explorer 4 inch quad which would be perfect since I am putting this FC into a 4 inch craft. Except for the Craft Name and a few OSD changes, I have made no other changes to Betaflight and certainly nothing to the tune. I want to see how this thing performs straight out of the box.
