it sounds like a motor, esc or power supply issue.
does it fall over the same axies all the time? if yess, switch two motors - if it changes the axies its the motor if not it might be the esc
if it is various, check the condensator, power lead..
It is various, i changed xt60, condensator, redo the upload of betaflight 4.4.0 with default settings, re-flash bluedjay with default settings. but it doesn't change anything . In the log i see a voltage drop just before. I don't know what to check. Is it a bad ESC ? or it can a be a bad motor ?
check the frame stiffness, any arm less rigid? anything moving? connection well between esc and fc?
can you provide a dvr?

that doesnt look like a desync issue, it would freakout and do a few flips. an dvr with osd could maybe help, was it maybe a ruanawayprotection feature?

what aio, motors and battery do you use?
I will post a DVR. It happens every time i increase the throttle quickly. How can i know if it is a runaway protection feature?
