For 1S, you probably don't need capacitor. If you want, you can probably get away with 300-500uf and 5-10V. 1000uf is unnecessary too much.

None needed with the 6mm motors, but I run 8x20mm and 8.5x20mm motors and they do scramble the video. When idle you can see the video, but when you throttle it, the video is immediately scrambled. I will try the smaller size that you suggested.
