I’d suggest-
On the pid tuning tab in betaflight, set Dynamic Idle Min to 34.
On esc-configurator, decrease your startup/ramp up power and set demag compensation to high.
Take it for a flight, do some hard throttle movements, see if it fixes it.
If it doesn’t, try rolling back to Bluejay v0.16. There’s been some reports of the later versions of bluejay causing desyncs on some esc’s.
If that still doesn’t fix it, try disabling bidirectional dshot. It means that you won’t be able to use rpm filter or dynamic idle, but I’ve come across a few boards that have weird issues with bidirectional dshot.
Edit- another thing to try is either lower pitch props, or props with less blades. In my experience, most of my desyncs have been caused by overpropping- when the motor just can’t spin the prop up fast enough.
Edit edit- I initially said increase your startup power, but that’s not correct. You want to decrease it. I always get that backwards.

121 When it comes to blackbox logs, I still consider myself a beginner, so keep that in mind.
Gaps can happen. You can increase your blackbox logging rate, and that should help get rid of the gaps, but, increasing your logging rate will increase the amount of memory used by the log (not a problem if you’re using an sd card, but if you’re using an onboard flash based blackbox logger, it might be), and it can increase your cpu load (not likely a problem if your using an f7/h7 fc).

0 I set Dynamic Idle to 34, changed minimum Startup Power from 1025 to 1010 and demag compensation to HIGH and know i don't have desync when doing small throttle move. But when i'm doing big throttle move i have something motor desync.
Should i reduce a little more minimum Startup Power?

121 Yup, you can go lower.
If your motors start struggling to spin up when you arm, you’ll know that you’ve gone too low.
