I'll start with an old one - but having over 3 million views by now (!) this must be one of the most inspiring videos ever. It is the one that convinced me to build an fpv quad - me and probably hundreds of thousands of other people too. 
Then there's of course mattystuntz, imho the greatest pilot i've seen. This is one of his latest... i hope he will do more again in the future, he hasn't been uploading much since.
Let's also not forget Charpu who gave freestyle flying a big push.
