On both my unify pro HV and V3 I can turn off pit mode but can’t turn them back on.
 Doesn’t matter if I use sticks or betaflight lau scripts pitmode is always turned on after connecting LiPo and once turned off it won’t turn on unless disconnect and reconnect LiPo.
 Is this just the way pit mode works?
I’ll check vtx tables and settings in betaflight but it seems like sticks should turn it both on and off.

It sounds like you have it set up in BetaFlight as "always on until first arm"

 It does the same thing on both my unify pro v3 and HV.
 One has pit mode turned off when armed.
 I’ve just been turning down power to 25mW if I get stuck in a tree or go walking.
 One of my unify pro v3 S.Audio isn’t working.
 It was but now I all I get is stats and back after going to Vtx using sticks. 
In betaflight lau scripts it reads I’m on band U but I can’t change any settings.

Pitmode back to on I haven’t figured out but I did find a bent pin that connected S.Audio to FC so that has been fixed.
I’ll check betaflight settings on pitmode but S.Audio won’t work with a bent pin.
