We have a barn that is 200 yards from closest indoor router and finding a security camera has been difficult.
  There’s probably ways to make one but what to record it too or using a tablet to view it may be a problem too.
  Is there any way to build one myself and what’s a good outdoor camera that can capture face or other identifying freatures?

raspberry pi, sensors and cam would give a good system. other wise a regular ip-cam, preseted for it.
ip cams have some downsides, sometimes they generate the opposide than security. if they are going hacked, they know when the house is empty of person.... there are a lot examples where they maked a house less secure.

you might be able to use a directional wifi antenna like https://www.amazon.com/SimpleWiFi-G2424-...B00NQGVMSE to get wifi out to the shop. check reviews, and look for similar products. I was going to suggest a POE line, but you'd need a repeater in the middle to reach 200 yards.
