0 So basically I was configuring my newly build quad and after giving a little bit of throttle to my quad some motors start accelerating on their own when I lower it.
It's probably a simple fix but I've been looking for it for quite a while now and can't find it.

100 what esc protocoll ase you use? and what ability does your esc have? dshot?
for other protocolls you need to calibrate the esc, on dshot its not needed. if you can choose dshot or watch a tutorial about calibrate esc with betaflight.
your description isnt clear enough, but a diffrent spin-speed could come frome uncalibrated esc.

16 Props on or off? Motors spinning up by themselves on the bench with props off is normal.

0 Wow! Thank you for all these responses. I'll go test em now! I have Dshot enabled on my esc and they're capable of it.
They do start getting out of Controll with both props on and off.

0 Thank you for all your help! It was a flip of a switch after all.
1. I was using Dshot1200 instead of 600. My escs don't support 1200 and I forgot.
2. The motors were acting like in the video of JB and I fixed em by changing their directions.
