With the 3x5x3  being higher and more of a curve to the blade and more capable of pushing more air per RPM.
With the 5 being the pitch.

For prop specifications, the first number is the diameter in inches, the second number is the pitch of the blades (the higher the number the more acute the pitch is), and the last number is the number of blades. So in your example, yes, 5 is the pitch.
