This decides what you will connect to the pin marked RAM.
You can either connect to the 5V pad directly above or the VBAT pin directly below. This decides what the RAM pins at the video input and output pads at the top of the board will output.
Your suggested wiring for the ESC to the flight controller worries me. I know what the pins do on the flight controller's socket and I'm not sure if your assignments match up. The black and red are either ground and +5V or ground and battery voltage. The yellow wire is almost certainly from the current sensor and should be connected to pin marked CRNT.
What make and model is the 4-in-1 ESC? If I know the exact pinout of the ESC then it's easy to match the wires up. You might need to relocate the pins or make up a custom connector as there are seven pins on your ESC. What's on the other side of the cable? The socket on the Omnibus is eight pins...

72 To power the Omnibus, you need to connect battery voltage to GND and VBAT somewhere, There are two VBAT pins. One on the ESC connector and one at pin 2 of J4. Either will do. All the pins marked 5V are outputs!

0 to answer your question, yes there are 7 wires coming out of the esc and only 6 going into the old FC via that socket. The 7th is the "Posi" going to the old FC if you look on the right side of it. What is VSS coming out of the ESC? ... Ok so I don't have the gear to make a convenient new connector to use on the new omnibus, so, lets say I had to split up all 7 of those wires coming off the ESCs and solder them all individually.
"Posi" (red wire) would go to j4-2nd pin
PPM 1-4 would go to j-12 through 15 1st pin
that just leaves the 5v and VSS wires.
also I don't know which one is negative coming from the esc.
I dont know what kind of ESCs they are. It doesn't say on it. It is the 4 in 1 ESCs that come on the BFight210.

72 One of the wires must be the output from the current sensor - out of the seven wires, four are the ESC control signals, two are red and black and the last one has to be the current sensor.
Your multimeter will tell you if the red wire is 5V or VBAT.
Check it before you connect stuff!
There are corresponding pads on the Omnibus for all of the signals that are routed to the Picoblade connector, so direct soldering them is the way to go if you don't have an 8 pin shell to relocate the wires into.
