2 These seems strange. They are calling them "high sensitivity" but what they really mean is "longer throw". Longer throw means the same movements theoretically result in finer control, but it also means you have to extend farther to get to the extremes of that control.
I think these might be a "must try before you buy" kind of thing.

2 In that case, these seem like they would almost be more difficult to fly with. I already have trouble making minute adjustments in throttle at times.
