3 CCD is best for FPV because the sensor scans the image frame by frame, so has a steadier picture and can adjust to lighting changes better.
CMOS image suffers badly when the camera is vibrated due to the fact CMOS sensors scan the image line by line from top to bottom giving a wavy effect but CCD takes the image in one hit, so any vibration can make the picture really wobbly.

3 CCD every pixle has it's own "brightness" that's why you can have a wide dynamic range (look into the sun but still see ground).
And because of how it gets read (the pixles) you have no rolling shutter.
Those are for me the main points to fly CCD
